The Great Spiedini is a start-up food and catering enterprise whose specialty is Spiedie Sandwiches. Spiedies, also known as Spiedini, is an ethnic delicacy that is extremely popular across upstate New York with its roots in the Greater Binghamton area. In its simplest form, a Spiedie is cubed meat (typically chicken, pork, beef, or lamb) that is marinated and then cooked over a charcoal fire. The Spiedie's popularity in upstate New York has spawned a cottage industry that has spanned generations. The key to a delicious Spiedie is the marinade which provides its unique flavor. Over the past ten years the owners of The Great Spiedini have painstakingly worked to perfect their Spieide marinade and as a result have decided to share this upstate New York delicacy with Tampa Bay area by exhibiting in Fresh Markets, Fairs, and other festivals.
